I like the term no-bake because I am not a true a baker in my kitchen. I find life in the kitchen a little easier by using smart shortcuts and putting more effort into my presentation. Such a faker, I know, but I am no Martha Stewart. I can, however, make a mean Easter bread from scratch (family recipe) and Tarelles (Italian Christmas cookies) that I learned from my sweet Mom.
Here is what you will need for this quick cookie recipe:

Biscotti cookies, store bought is okay, but if you can bake them from scratch, you are my hero!
White Chocolate chips
Candy Canes or peppermint candies
Step 1: Crush the peppermint candy in a sandwich bag to avoid making a mess. Save for topping.
Step 2: Melt the chocolate chips. I have an electric chocolate melting pot, but you can melt the chocolate just as easy in a pan. Go here for a video on melting chocolate if you need more help. I use my melting pot quite a bit for chocolate covered strawberries and pretzels, t's definitely worth the $20 investment if you love chocolate as much as I do.
Step 3: Dip or coat the cookies with the hot melted chocolate and lay on parchment paper.
Step 4: Sprinkle cookies with crushed peppermint.
Give it a few minutes for the chocolate to harden and enjoy!
